Vinification Details
The grapes are picked during the night when the temperature outside is the lowest. The grapes are gently pressed, and only the clearest juice ferments at low temperature with selected yeasts. Ageing is carried out on fine lees, during 2 months. A small part is aged with medium toasted French oak, to get some complexity on the nose.
